Illustration inspired in Ecuador’s traditional Easter soup: Fanesca.
A delicious soup prepared with sambo (figleaf gourd), pumpkin, twelve different kinds of grains and legumes: chochos (lupines),habas (fava beans), lentils, peas, corn and others, which symbolize
the 12 Apostles and 12 tribes of Israel.
Due to the Christian religious prohibition against red meat during these celebrationsthe Fanesca has bacalao (salt cod), that symbolizes Christ and the way that his message feeds the Christian community.
The preparationand eating of this traditional dish is considered as a social and familiar event in the Ecuadorian culture. For more informationabout Fanesca and the Holy week see pages 16 & 82.
